Chai-wale uncle

The 'Chai-wale uncle' is how we address this man, who has a shanty tea stall in a small 'gully' behind my office. The man makes tasty 'cutting-chai' and serves them in the traditional glasses. The other things that are available at his stall include Bread-Butter, 'Fein' and 'Mathhi'. So next time you are in Delhi and feel like a cup of tea... Its my treat at Chai-wale uncle's tea-stall. :-)

.."cutting"..reminds me of Mumbai. Lashing rains, slushy roads and the road-side stall serving rain-diluted "cutting" with moist samosas ....wish I had more of those !!

Forgive my ignorance, but what is it that makes it 'cutting'?

Thank you very much, and here I was thinking that it would be some sort of complicated and exotic mix of spices! :)
